The Nutrition Corner turns a classroom corner, clinic, office or wellness fair booth into a hands-on station. It teaches healthy eating first, then the reality of food in America: the processed food that is cheap, fast, tasty and always in front of us. Choose the size that fits your space.

Who it's for: two workbooks

  • Kids Workbook, grades K to 5: coloring, circling, counting sugar cubes and very little writing, with big type for young readers.
  • Teens and Adults Workbook, grades 6 to 12 and adults: label reading, sugar math, planning and an adult section for clinics, worksite wellness and fair booths, built around shopping, cooking and budget.
  • English and Spanish: both workbooks, the handouts and the PowerPoint shows come in both languages.

Educators print only the book for their group, so there is no digging through pages they do not need.

Module 1: Build a Healthy Plate (core kit)

Goal: Eat a variety of foods from all 5 food groups and build a healthy, colorful plate. Foods are grouped by the way they are grown and bought, so eating from every group gives you a nutrient-dense diet.

What you get: Build-a-Plate food models and plate, Food Group flash cards (20-card rainbow deck color coded by MyPlate group), MyPlate poster, Build a Healthy Plate PowerPoint show, workbook pages.

Activities:

  • Sort It: sort the flash cards into the 5 food groups and name what each group gives you
  • Build the Plate: make a balanced breakfast, lunch or dinner
  • Rainbow Hunt: count the colors on your plate and aim for 3 or more

Module 2: Sugar, Labels and Calorie Density

Goal: Read a label, spot added sugar, and choose foods that fill you up for fewer calories. The Dietary Guidelines say no amount of added sugar is part of a healthy diet, yet the average American eats about 17 teaspoons a day.

What you get: Label flash cards (blue 20-card deck, 10 food pairs to compare), 200 Calories flash cards (yellow 20-card deck), 3D sugar cubes, Sugar, Labels and Calorie Density PowerPoint show, workbook pages.

Activities:

  • Sugar Math: grams of added sugar ÷ 4 = teaspoons; stack the cubes for a soda or juice drink
  • Label Detective: find the added sugar, fiber and first ingredient
  • 200 Calories: compare what 200 calories of chips looks like next to fruit and vegetables

Module 3: Processed Foods and Healthy Habits

Goal: Tell whole foods from ultra-processed foods and make everyday swaps, starting with more fruits and vegetables.

What you get: Ultra-Processed flash cards (red 20-card deck) and 3D models of common ultra-processed foods, Swap It flash cards (green 20-card deck), Meet the Kernel 3D whole grain replica, Lunchtime Hero award, Processed Foods and Healthy Habits PowerPoint show, workbook pages.

Activities:

  • Whole to Ultra-Processed: line foods up from whole to ultra-processed
  • Meet the Kernel: use the 3D kernel to point out the bran, germ and endosperm, and learn what refining strips away
  • Swap It: lay down a red ultra-processed card and find its green swap that is still quick and affordable; earn the Lunchtime Hero for adding fruits and vegetables

What's on the cards

Food Group deck (rainbow, 4 foods per group):

  • Fruits: strawberries, orange, banana, blueberries
  • Vegetables: cherry tomatoes, carrots, corn, broccoli
  • Grains: whole wheat bread, brown rice, oatmeal, whole grain pasta
  • Protein: salmon, chicken breast, egg, garbanzo beans
  • Dairy: milk, yogurt, cheese, fortified soy milk

Each card shows the food on the front and its food group, color and key nutrient on the back.

Ultra-Processed (red) and Swap It (green) pairs include:

  • Soda → water with fruit slices
  • Snack cake → banana or apple
  • Frosted cereal → plain oats with berries
  • Hot dog → grilled chicken
  • Chicken nuggets → baked chicken strips
  • Cheese puffs → air-popped popcorn
  • Candy bar → trail mix with nuts and dried fruit
  • Toaster pastry → whole wheat toast with peanut butter
  • Flavored chips → veggie sticks with hummus
  • Doughnut → whole grain English muffin

Trick cards like canned beans and plain yogurt show that not all processed food is bad.
